In a large bowl, combine flour, oats, salt and baking soda.
In the bowl of your stand mixer, cream together butter, vegetable oil and sugars over medium speed until smooth. Add eggs and vanilla extract. Slowly add flour mixture until fully combined. Stir in chocolate chunks.
Line a baking sheet with parchment paper and drop rounded tablespoons of cookie dough onto the baking sheet.
Bake cookies for 9-11 minutes.
Remove cookies from the oven and transfer to a cooling rack.
