Mexican Quinoa

Ingredients
  

  • 1 cup quinoa
  • 1 small white onion diced
  • 2 cups chicken broth vegetable broth for vegan/vegetarian
  • 2 tablespoon tomato paste
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 1 teaspoon chili powder
  • ¼ teaspoon garlic powder

Instructions
 

  • Add olive oil and diced onions to a large saucepan over medium heat. Cook the onions, stirring occasionally until soft.
  • Add quinoa to the onions and cook for a few more minutes, stirring occasionally to lightly toast quinoa.
  • Add the remaining ingredients to the pan and bring to a simmer. Stir to make sure the tomato paste is well incorporated and not chunky.
  • Turn to a low simmer, cover, and cook for about 20 minutes. Check on quinoa and give a light stir to make sure bottom is not burning.
  • Remove quinoa from heat and serve. Enjoy!
