small white onion

vegetable broth for vegan/vegetarian

chili powder

garlic powder
Instructions
Add olive oil and diced onions to a large saucepan over medium heat. Cook the onions, stirring occasionally until soft.
Add quinoa to the onions and cook for a few more minutes, stirring occasionally to lightly toast quinoa.
Add the remaining ingredients to the pan and bring to a simmer. Stir to make sure the tomato paste is well incorporated and not chunky.
Turn to a low simmer, cover, and cook for about 20 minutes. Check on quinoa and give a light stir to make sure bottom is not burning.
Remove quinoa from heat and serve. Enjoy!
