Chicken Parmesan

Ingredients
  

  • 4 chicken thighs or breasts pounded to make evenly thin
  • ¼ cup grated parmesan cheese
  • 1 cup breadcrumbs I use panko
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried basil
  • 4 slices mozzarella cheese

Instructions
 

  • Preheat oven to 425 degrees. In a small bowl, combine breadcrumbs, grated parmesan, paprika, salt, pepper, garlic powder and basil.
  • Press each chicken thigh/breast into the bread crumb mixture on each side. Line a baking sheet with parchment paper. Lay each piece of chicken onto the sheet. Bake for 15 minutes then flip chicken over and cook for another 15 minutes. When chicken is done, juices will run clear, internal temp will be about 170 degrees.
  • Place a slice of mozzarella cheese on top of the chicken and place back in the oven until cheese is melted, about 2-3 minutes. Remove from oven.
  • Serve chicken parmesan over a bed of spaghetti topped with marinara sauce. Enjoy!
