Crusty, tender and delicious bone-in ribeye steaks seared on a cast iron skillet and finished in the oven. This is how you cook a tender and juicy ribeye steak in the oven!
Pull steaks out of the fridge about 30 minutes to 1 hour before cooking.
Preheat oven to 325 degrees.
In a bowl, combine dry seasonings. Pat dry steaks and rub all sides with the seasoning mixture.
Heat a cast iron skillet to high heat. Once the skillet is very hot, carefully add 1-2 tablespoons olive oil. Sear steaks for 30 seconds on each side. The steak will develop a nice crust.
Place a ½ tablespoon slice of butter on top of each steak and immediately transfer to the oven. Cook for about 10-12 minutes. Using a meat thermometer, check the temperature of the center of the steak. When the internal temperature reaches 125 degrees, pull steak out of the oven and let rest for 5 minutes. Slice and serve with your favorite side dishes.

Recipe notes: ***125 degree internal temperature will give you a medium-rare steak. If you like your steak cooked longer, leave until internal temp is 135 degrees for medium and 145 degrees for medium well. ***My steaks were about 1 lb. each.
