In a large bowl, mix flour, baking soda, cinnamon, ginger, nutmeg and salt.
In the bowl of your stand mixer with the paddle attachment, beat together butter and brown sugar until smooth. Add vanilla extract and molasses and mix to combine. Add egg and beat until smooth.
Add flour mixture to the wet ingredients and beat until fully combined. Cover bowl with plastic wrap and place in the fridge for 30 minutes to chill.
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper. Roll about 1-½ tablespoons of cookie dough into a ball. Then roll into granulated sugar and transfer to the baking sheet. Repeat with remaining dough.
Bake cookies for 10-12 minutes until golden and a toothpick runs through the cookie and comes out clean. When done transfer cookies to a cooling rack.
