Ground Beef Baked Empanadas

Ingredients
  

Ingredients:

  • 1 empanada dough < click for recipe

Ground Beef Mixture:

  • ½ lb ground beef
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped carrots
  • ¼ cup finely chopped red bell pepper
  • 2 cloves minced garlic
  • 1 tablespoon olive oil
  • 2 tablespoon tomato paste
  • 2 tablespoon water
  • 2 teaspoon worcestershire
  • 1 teaspoon chili powder
  • 1 ½ teaspoon red wine vinegar
  • ¼ teaspoon cumin
  • ¼ teaspoon oregano
  • ¼ paprika
  • salt and pepper

Creamy Chipotle Aioli Dip

  • 1 tablespoon chipotle in adobo sauce
  • ¼ cup mayo
  • ¼ cup sour cream
  • 1 tablespoon lime juice

Instructions
 

Directions:

  • For the ground beef mixture: Place olive oil, carrots, onion and red bell pepper in a saucepan over medium low heat and stir. Cover and let cook for about 5 minutes or until the veggies begin to soften. Turn the heat up to medium and add the ground beef and garlic. Cook about another 5 minutes until beef browns. Add remaining ingredients and reduce heat to low. Cover and cook for another 10 minutes to really let your flavors develop. Then, Remove from heat.
  • Chipotle Dip: place chipotle, mayo, sour cream and lime juice in a blender and blend just until combined. Then, place in the fridge until your empanadas are ready.
  • Preheat your oven to 400 degrees.
  • Now, it's time to assemble your empanadas. Get out your empanada dough, cut into 8 equal pieces and roll out each piece into a circle. Scoop about 1 to 2 tablespoon of the meat mixture onto one side of your empanada. Repeat for all 8 empanadas. Then fold over the other side of the empanada and seal edge shut with a fork.
  • Place empanadas on a baking sheet covered in parchment paper. Bake for about 15 minutes or until they begin to golden. Enjoy with your creamy chipotle aioli dip! YUMM.
