Oatmeal Apple Cookies

  • 1 cup flour
  • 1 cup rolled oats
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 cup softened butter
  • 1/4 cup chopped almonds
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp allspice
  • 2 eggs
  • 1 apple peeled and chopped about 1 cup
  • 1 tsp cinnamon


  • Preheat oven to 350 degrees.
    Beat sugars and butter until smooth. Add eggs one at a time.
    In a separate bowl, combine flour, cinnamon, allspice, salt and baking soda.
    Lightly beat flour into wet mixture. Do not over mix.
    Fold in apples, oats and almonds.
    Drop even spoonfuls of dough onto baking sheet lined with parchment paper.
    Bake for 10-12 minutes or until golden brown. Transfer to cooling rack.
