Red Potato Salad

Ingredients
  

  • 6 red potatoes
  • ½ cup mayo
  • ½ tablespoon distilled vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon yellow mustard
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • teaspoon black pepper
  • ¼ teaspoon dried dill
  • ¼ teaspoon dried parsley

Instructions
 

  • Slice red potatoes in half and then lay flat side down on the cutting board and cut each half into threes. Place potatoes in a saucepan and cover in water. Bring water to a boil and boil for about 7-9 minutes until potatoes are tender but not so tender that they are mush. Drain potatoes and let cool completely.
  • In a large bowl, add remaining ingredients and stir to combine. Toss potatoes in the sauce and place in the fridge for about 1 hour to let potatoes soak up all the flavor of the sauce.
