Slice red potatoes in half and then lay flat side down on the cutting board and cut each half into threes. Place potatoes in a saucepan and cover in water. Bring water to a boil and boil for about 7-9 minutes until potatoes are tender but not so tender that they are mush. Drain potatoes and let cool completely.
In a large bowl, add remaining ingredients and stir to combine. Toss potatoes in the sauce and place in the fridge for about 1 hour to let potatoes soak up all the flavor of the sauce.
