Chicken Salad with Cranberries

Chicken salad made with shredded rotisserie chicken, dried cranberries and celery. This chicken salad is simple and delicious! It goes great on a sandwich, on top of crackers as an appetizer, or just by itself!

  • 1-1/2 lb. rotisserie chicken 3 cups shredded
  • 1 celery stalk thinly sliced (about 1/2 cup)
  • 1/4 cup dried cranberries
  • 1/4 tsp tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup mayo
  • 1 tbsp lemon juice
  • 3 tbsp onion finely chopped


  • In a large bowl combine all ingredients until well incorporated. Serve with sliced bread or it's great on it's own! Enjoy!
