Heat oil in a cast iron skillet over high eat. Once your skillet is very hot, using tongs, carefully sear the pork on all sides until you get a nice char. This should take about 30 seconds on each side.
Once the pork is seared, place it in your crockpot. Pour the drippings from the skillet over the pork. Add remaining ingredients to the crockpot. Lift up the pork to make sure some of the water runs underneath it.
Place your crockpot in the low heat position and cook on low for 8 hours.
Once the pork is done, you should be able to very easily shred it with two forks. Shred the pork and serve. ~~ If you like your carnitas a little crispier, add back to the cast iron skillet over high heat and sear for a minute or so, stirring constantly. You don't want to overcook it! Enjoy!!
