Cut the potatoes in half. Working with each half, cut your potatoes into ¼"-½" slices and repeat for both potatoes. Then, place the potatoes in a large bowl of water to let soak for at least 30 minutes to remove starch from the potatoes.
To fry the potatoes, pour your oil in a deep saucepan and turn heat to medium-high. Once the oil is hot, add potatoes working in batches. Fry for about 4 minutes and then remove potatoes and place on a plate. Repeat with all potatoes. Then re-fry all of your potatoes using the same method. This is a double frying method which gives you a perfect crunchy french fry. Sprinkle your french fries with salt to taste.
