Classic Egg Salad

Protein packed, simple and healthy egg salad recipe. Serve egg salad on its own, on crackers or as an egg salad sandwich.

Ingredients
  

  • 8 hard boiled eggs peeled
  • 2 tablespoon pickle (dill or sweet) finely chopped
  • cup mayonnaise
  • 2 tsp mustard dijon or yellow
  • ¼ tsp paprika
  • 2 tablespoon green onion chopped
  • salt and pepper to taste

Instructions
 

  • Place eggs in a large saucepan and cover with water. Bring water to a boil. Once water begins to boil, remove from heat, cover and let stand for about 10 minutes. Remove eggs from pan and let cool.
  • Peel hard boiled eggs and transfer to a bowl.
  • Add remaining ingredients to the bowl with your eggs and begin to break up eggs with fork and mix until well combined. Try not to mash the eggs, so you have a chunky egg salad.
