Apple Cinnamon Muffin Cookies

Ingredients
  

  • 1 ¼ cups all-purpose flour
  • cup granulated sugar
  • cup brown sugar
  • ½ cup butter softened
  • ½ teaspoon baking soda
  • ½ tsp salt
  • ½ teaspoon vanilla extract
  • 1 egg
  • 1 small apple peeled and chopped finely
  • 2 teaspoon cornstarch
  • 1 teaspoon cinnamon for rolling
  • 2 tablespoon granulated sugar for rolling

Instructions
 

  • Preheat oven to 350 degrees.
  • In a bowl, combine flour, salt and baking soda.
  • In another bowl, add chopped apple and cornstarch. Mix to fully coat apples.
  • Fit your mixer with the paddle attachment. Over medium speed, beat butter and sugars until smooth. Beat in egg and vanilla extract. Slowly beat in flour mixture until fully combined. Then, fold apples into the dough.
  • In a small bowl, mix cinnamon and sugar. Roll dough into tablespoon sized balls of dough and then roll into the cinnamon sugar mixture. Transfer to a parchment paper lined baking sheet.
  • Bake cookies for 10-12 minutes. A toothpick should run through the cookie and come out clean. Transfer cookies to a cooling rack.
