Honey Roasted Whole Carrots
Whole carrots seasoned with honey, olive oil, garlic, salt, pepper and fresh dill roasted in the oven.
- 1-2 lbs. whole carrots 1-2 pounds whole carrots, regular or rainbow
- 1 tbsp fresh dill chopped or 1/2 tsp dried
- 1 tbsp honey
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tsp olive oil or you can use avocado or canola oil
- 1/4 tsp garlic powder
Preheat oven to 400 degrees.
In a small bowl, whisk together honey, dill, salt, pepper, garlic powder and olive oil.
Lay carrots on baking sheet and baste carrots all over with honey mixture. Be sure to roll carrots around to fully coat carrots.
Place carrots in the oven and roast for 25-30 minutes until slightly tender and golden.
Melt butter with honey to make honey butter.
Remove carrots from oven and baste with honey butter. Enjoy.
