Honey Roasted Whole Carrots

Whole carrots seasoned with honey, olive oil, garlic, salt, pepper and fresh dill roasted in the oven.

  • 1-2 lbs. whole carrots 1-2 pounds whole carrots, regular or rainbow
  • 1 tbsp fresh dill chopped or 1/2 tsp dried
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tsp olive oil or you can use avocado or canola oil
  • 1/4 tsp garlic powder

Honey Butter

  • 2 tbsp butter
  • 1 tsp honey


  • Preheat oven to 400 degrees.
  • In a small bowl, whisk together honey, dill, salt, pepper, garlic powder and olive oil.
  • Lay carrots on baking sheet and baste carrots all over with honey mixture. Be sure to roll carrots around to fully coat carrots.
  • Place carrots in the oven and roast for 25-30 minutes until slightly tender and golden.
  • Melt butter with honey to make honey butter.
  • Remove carrots from oven and baste with honey butter. Enjoy.
