One Bowl Chocolate Cupcakes

Ingredients
  

  • 3/4 cup white sugar
  • 1 1/4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup milk
  • 1/4 cup hot coffee/hot water
  • 3 tbsp greek yogurt or sour cream
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1/4 cup vegetable oil

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a standard sized cupcake pan with 12 cupcake liners.
  • In a large mixing bowl, add all dry ingredients and mix to combine.
  • Add egg, milk, yogurt, vegetable oil and vanilla extract and mix to combine.
  • Finally, add the hot coffee or hot water and mix until you have a nice smooth batter.
  • Fill cupcake liners about two thirds of the way full.
  • Bake cupcakes in the oven for 17-19 minutes until a toothpick runs through the cupcake and comes out clean.
  • Let cupcakes cool completely before you frost them.
