Slow Cooker Lasagna

Ingredients
  

  • 12 Sheets Lasagna
  • 1 lb. Ground Italian Sausage
  • 2 15 oz. Tomato Sauce cans
  • 1 Large Carrot grated
  • 1 cup Onion chopped
  • 4 Garlic Cloves minced
  • 2 cups Mozzarella shredded
  • ¼ cup Parmesan shredded
  • 1 ½ cups Cottage Cheese
  • 1 tablespoon Brown Sugar
  • 2 tablespoon Balsamic Vinegar
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 teaspoon Dried Parsley
  • 2 teaspoon Dried Basil

Instructions
 

  • Start by making the meat sauce: In a large skillet over medium heat, add sausage, carrots and onions. Cook, stirring occasionally, until sausage is browned and veggies are tender. Stir in garlic, brown sugar, balsamic vinegar, salt, pepper, parsley, basil and tomato sauce. Bring sauce to a low simmer for 5 minutes. Then, remove from heat.
  • In a small bowl, mix mozzarella and parmesan cheese.
  • Arrange Lasagna in Slow Cooker: Start by scooping 1 cup of sauce and spread evenly in the bottom of your slow cooker. Top sauce with lasagna sheets, you'll need to break them up to fit covering the bottom. Spread half of the cottage cheese evenly on top the lasagna. Sprinkle ⅓ of the cheese on top of the cottage cheese. Top with 1 ¼ cup sauce. Repeat this layer for the second layer. Top second layer with lasagna, followed up remaining sauce then remaining cheese.
  • Cook lasagna on low heat for 4 hours. When done, let lasagna cool slightly, slice and serve. Enjoy!
