Bring a large pot of water to a boil and cook macaroni according to package instructions for al dente (usually 1 minute less than normal cooking time). Drain pasta and set aside when finished.
In another saucepan, add 2 tablespoon butter and chopped onion. Cook onion until soft, then add the minced garlic and chipotle in adobo sauce (add 2 tablespoon if you don't like as much spice and 3 tablespoon if you like it hot).
Add the flour to the saucepan and stirring frequently begin to slowly add the milk. Bring sauce to a simmer and then turn heat to very low and stir in your cheeses.
Pour macaroni into your creamy sauce and give it a nice stir to fully coat macaroni. Remove from heat and cover to let the flavors to develop into the macaroni while you toast the breadcrumbs.
Mix breadcrumbs with melted butter and lightly toast in your toaster oven or over a hot skillet. Just barely toast until golden and be careful not to burn.
Pour breadcrumbs over your chipotle macaroni and cheese and sprinkle with cilantro. You are ready to serve! Enjoy!!
