  • 1/2 lb. macaroni
  • 2 tbsp butter
  • 1/3 cup yellow onion finely chopped
  • 2 garlic cloves minced
  • 1-1/2 tbsp flour
  • 1-1/2 cups warm milk
  • 1/2 cup parmesan cheese grated
  • 1-1/2 cups cheddar cheese grated
  • 2-3 tbsp chipotle in adobo sauce
  • 1/4 tsp salt
  • 1/3 cup panko breadcrumbs
  • 1 tbsp butter melted
  • 1 tbsp cilantro finely chopped

  • Bring a large pot of water to a boil and cook macaroni according to package instructions for al dente (usually 1 minute less than normal cooking time). Drain pasta and set aside when finished.
  • In another saucepan, add 2 tbsp butter and chopped onion. Cook onion until soft, then add the minced garlic and chipotle in adobo sauce (add 2 tbsp if you don't like as much spice and 3 tbsp if you like it hot).
  • Add the flour to the saucepan and stirring frequently begin to slowly add the milk. Bring sauce to a simmer and then turn heat to very low and stir in your cheeses.
  • Pour macaroni into your creamy sauce and give it a nice stir to fully coat macaroni. Remove from heat and cover to let the flavors to develop into the macaroni while you toast the breadcrumbs.
  • Mix breadcrumbs with melted butter and lightly toast in your toaster oven or over a hot skillet. Just barely toast until golden and be careful not to burn.
  • Pour breadcrumbs over your chipotle macaroni and cheese and sprinkle with cilantro. You are ready to serve! Enjoy!!
