Chipotle Macaroni and Cheese

Creamy Chipotle Macaroni and Cheese with a delicious crunchy breadcrumb topping. This is the ultimate upgrade to your classic mac and cheese recipe made with spicy chipotle peppers and a buttery crunchy breadcrumb topping!

Having a weak spot for macaroni cheese and seeing this chipotle style mac and cheese becoming popular at local barbecue joints, I knew I had to give it a go. The best part about this mac and cheese is that it is so easy to make and might be the best mac and cheese I’ve made!

Serve this deliciousness as a side dish with your favorite barbecue meats or eat it as a main course. Either way, you can’t go wrong!

Chipotle Macaroni and Cheese Recipe

Serves: 2-4 people

Ingredients:

  • 1/2 lb. macaroni
  • 2 tbsp butter
  • 1/3 cup yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1-1/2 tbsp flour
  • 1-1/2 cups warm milk
  • 1/2 cup parmesan cheese, grated
  • 1-1/2 cups cheddar cheese, grated
  • 2-3 tbsp chipotle in adobo sauce
  • 1/4 tsp salt
  • 1/3 cup panko breadcrumbs
  • 1 tbsp butter, melted
  • 1 tbsp cilantro, finely chopped

Directions:

  1. Bring a large pot of water to a boil and cook macaroni according to package instructions for al dente (usually 1 minute less than normal cooking time). Drain pasta and set aside when finished.
  2. In another saucepan, add 2 tbsp butter and chopped onion. Cook onion until soft, then add the minced garlic and chipotle in adobo sauce (add 2 tbsp if you don’t like as much spice and 3 tbsp if you like it hot).
  3. Add the flour to the saucepan and stirring frequently begin to slowly add the milk. Bring sauce to a simmer and then turn heat to very low and stir in your cheeses.
  4. Pour macaroni into your creamy sauce and give it a nice stir to fully coat macaroni. Remove from heat and cover to let the flavors to develop into the macaroni while you toast the breadcrumbs.
  5. Mix breadcrumbs with melted butter and lightly toast in your toaster oven or over a hot skillet. Just barely toast until golden and be careful not to burn.
  6. Pour breadcrumbs over your chipotle macaroni and cheese and sprinkle with cilantro. You are ready to serve! Enjoy!!

    THIS WAS SO GOOD!!! Made it for dinner tonight and can not stop eating it. The toasted breadcrumbs really added an extra layer of deliciousness.
