Pumpkin Oatmeal Cookies with Cream Cheese Frosting

Ingredients
  

Ingredients:

  • ½ cup butter softened
  • ¾ cup brown sugar
  • ¾ cup granulated sugar
  • 1-¾ cup all-purpose flour
  • 2 eggs
  • 1 cup rolled oats
  • ½ cup pumpkin puree
  • ¼ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • teaspoon ground cloves
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder

cream cheese frosting:

  • 2 cups powdered sugar
  • 4 oz. cream cheese softened

Instructions
 

Directions:

  • In a bowl, combine flour, salt, oats, cloves, cinnamon, nutmeg, baking soda, baking powder and set aside.
  • Cream butter and sugars together in the bowl of your mixer on medium speed. Add pumpkin puree and eggs, one at a time.
  • Slowly mix the dry ingredients into the wet ingredients until fully combined.
  • Place dough in the fridge for 1 hour to let firm up.
  • Preheat oven to 350 degrees.
  • Drop small amounts of cookie dough on the baking sheet and gently press each cookie down to lightly flatten.
  • Bake in the oven for 9-11 minutes.
  • Cookies will be golden when ready. Remove from the oven and transfer cookies to a cooling rack to let cool completely
  • For the cream cheese frosting: Beat cream cheese and powdered sugar together until light and fluffy.
  • Once cookies have cooled, spread frosting on each cookie and serve!
