Tis’ the season for EVERYTHING PUMPKIN! And a little cream cheese doesn’t hurt! These pumpkin oatmeal cookies are soft and chewy and full of those fall flavors we all know and love.
Pumpkin Oatmeal Cookies with Cream Cheese Frosting
makes 2 dozen

Ingredients:
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1-3/4 cup all-purpose flour
- 1 cup rolled oats
- 2 eggs
- 1/2 cup pumpkin puree
- 1/4 tsp nutmeg
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/8 tsp ground cloves
- 1/2 tsp baking soda
- 1/2 tsp baking powder
cream cheese frosting:
- 2 cups powdered sugar
- 4 oz. cream cheese softened

Directions:
- In a bowl, combine flour, salt, oats, cloves, cinnamon, nutmeg, baking soda, baking powder and set aside.
- Cream butter and sugars together in the bowl of your mixer on medium speed. Add pumpkin puree and eggs, one at a time.
- Slowly mix the dry ingredients into the wet ingredients until fully combined.
- Place dough in the fridge for 1 hour to let firm up.
- Preheat oven to 350 degrees.
- Drop small amounts of cookie dough on the baking sheet and gently press each cookie down to lightly flatten.
- Bake in the oven for 9-11 minutes.
- Cookies will be golden when ready. Remove from the oven and transfer cookies to a cooling rack to let cool completely
- For the cream cheese frosting: Beat cream cheese and powdered sugar together until light and fluffy.
- Once cookies have cooled, spread frosting on each cookie and serve!
