Chocolate Chip Banana Bread

Moist and delicious banana bread made with lots of chocolate chips! Serve lightly toasted slices of bread with a smear of butter and a hot cup of coffee for breakfast or an afternoon snack.

Ingredients
  

  • 3 Bananas very ripe
  • ½ cup White Granulated Sugar
  • ¼ cup Brown Sugar
  • 1 ¾ cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 Egg
  • ¼ cup Butter melted
  • ¼ teaspoon Ground Cinnamon
  • 1 cup Mini Chocolate Chips or regular sized
  • 1 teaspoon Vanilla Extract

Instructions
 

  • Preheat oven to 350 degrees.
  • In a bowl, mix flour, cinnamon, and baking soda and set aside.
  • In a large bowl, mash the bananas. Add melted butter, brown sugar and white sugar and mix until well combined. Mix in egg and vanilla extract.
  • Sprinkle in flour mixture and mix until well combined. Mix in half the chocolate chips.
  • Pour banana bread mixture into a lightly buttered bread pan. Sprinkle remaining chocolate chips on top.
  • Transfer bread to the oven and bake for 45-50 minutes. Check on the banana bread at about 40 minutes and if the bread is getting very dark, cover with a piece of foil.
  • When done, remove bread from the oven and let cool slightly. Then, remove bread from baking dish and let finish cooling on a rack.
