Fried Zucchini

Ingredients
  

  • 3 zucchinis
  • 2 tbsp cornstarch
  • 1 cup panko crushed
  • 2 eggs
  • ¼ teaspoon salt
  • teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions
 

  • Cut the zucchinis into strips about 3 inches long. Do this by cutting the zucchini in half so you have two round halves, then cut those in half long ways and then into threes.
  • Grab three bowls. Fill one with cornstarch, the second with 2 whisked eggs and the last with breadcrumbs, salt, pepper and garlic powder.
  • Toss zucchini in cornstarch until fully coated. Then, dredge zucchini in the egg and then transfer to coat in the breadcrumb mixture. Repeat until all zucchinis are breaded.
  • Fill a skillet with oil about 2 inches up the side. Heat oil to 350 degrees.
  • Carefully add zucchini to the skillet frying until golden. Carefully use tongs to rotate the zucchini to make sure all sides are frying evenly. Transfer zucchini to a rack as they finish. Serve immediately with marinara sauce or ranch dressing.
