    Fried Zucchini

    Fried Zucchini - "Zucchini Fries" are the perfect appetizer or side dish dipped in your favorite marinara sauce or ranch dressing. This is also a great way to get the kiddos to eat their veggies!

    What ingredients do I need to make this recipe?

    • 3 large zucchini's
    • panko breadcrumbs
    • cornstarch
    • eggs
    • oil
    • salt
    • pepper
    • garlic powder

    What tools are needed?

    • Deep skillet
    • Tongs
    • Bowls
    • Measuring cups and spoons

    Can I bake the zucchini instead of frying?

    Yes, follow the recipe but skip frying and place in a 400 degree preheated oven for 15 minutes, flip zucchini over and cook for another 5-10 minutes.

    How do I make fried zucchini?

    Step 1: Cut the zucchinis into strips about 3 inches long. Do this by cutting the zucchini in half so you have two round halves, then cut those in half long ways and then into threes.

    Step 2: Grab three bowls. Fill one with cornstarch, the second with 2 whisked eggs and the last with breadcrumbs, salt, pepper and garlic powder.

    Step 3: Toss zucchini in cornstarch until fully coated. Then, dredge zucchini in the egg and then transfer to coat in the breadcrumb mixture. Repeat until all zucchinis are breaded.

    Step 4: Fill a skillet with oil about 2 inches up the side. Heat oil to 350 degrees.

    Step 5: Carefully add zucchini to the skillet frying until golden. Carefully use tongs to rotate the zucchini to make sure all sides are frying evenly. Transfer zucchini to a rack as they finish. Serve immediately with marinara sauce or ranch dressing.
