Apple Cinnamon Muffins

Amazing, moist and easy homemade apple cinnamon muffins made with applesauce. These muffins come together super easy with only a few simple ingredients and are done in under 45 minutes.

Ingredients
  

  • 2 cups All-Purpose Flour
  • 2 ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • cup Applesauce
  • ½ cup Butter softened
  • cup Brown Sugar
  • cup White Sugar
  • 2 Eggs
  • ½ cup Milk
  • 1 teaspoon Vanilla Extract

Cinnamon Sugar Topping

  • ¼ teaspoon Ground Cinnamon
  • ½ tbsp White Sugar

Instructions
 

  • Preheat oven to 375 degrees.
  • Begin by mixing cinnamon sugar topping in a small bowl and set aside.
  • In a large bowl, mix flour, cinnamon, salt and baking powder.
  • In a separate bowl, combine softened butter, brown sugar and white sugar. Whisk until smooth.
  • Whisk in applesauce, vanilla, milk and eggs.
  • Add dry ingredients to the wet and mix until just combined.
  • Evenly pour batter into your standard sized baking cup lined muffin pan. Sprinkle tops with cinnamon sugar topping.
  • Transfer muffin pan to oven and bake for 22-24 minutes. When done, muffin tops will be lightly golden and a toothpick should run through the muffins and come out clean.
  • When done, transfer muffins to a cooling rack to cool. Enjoy!
