Chocolate Chip Banana Muffins

Ingredients
  

  • 2 Bananas very ripe
  • ½ cup White Granulated Sugar
  • ¼ cup Brown Sugar
  • 1 ¾ cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 Egg
  • ¼ cup Butter melted
  • ¼ teaspoon Ground Cinnamon
  • 1 cup Mini Semi-Sweet Chocolate Chips
  • 1 teaspoon Vanilla Extract

Instructions
 

  • Preheat oven to 350 degrees.
  • In a bowl, mix flour, cinnamon, and baking soda and set aside.
  • In a large bowl, mash the bananas. Add melted butter, brown sugar and white sugar and mix until well combined. Mix in egg and vanilla extract.
  • Sprinkle in flour mixture and mix until well combined. Finally, gently fold in chocolate chips. Careful not to over mix.
  • Pour banana muffin batter into a lightly buttered muffin pan or into a paper baking cup lined muffin pan.
  • Transfer bread to the oven and bake for 20-22 minutes.
  • When done, remove muffins from the oven and let cool slightly. Transfer to a cooling rack to allow them to finish cooling.
  • Enjoy muffins freshly baked warm!
