Gnocchi with Peas

Gnocchi tossed in a savory tomato cream sauce with peas and fresh parmesan cheese. This is a super easy dinner recipe done in under 30 minutes.

Ingredients
  

  • 1 lb. Gnocchi
  • 1 tablespoon Olive Oil
  • 1 tablespoon Butter salted or unsalted
  • ½ Yellow Onion diced
  • ½ teaspoon Salt
  • 2 Garlic Cloves minced
  • 1 15 oz. Can Crushed Tomatoes
  • ¼ teaspoon Black Pepper
  • ½ teaspoon Dried Oregano
  • 1 teaspoon Dried Parsley
  • ¼ teaspoon Crushed Red Pepper
  • 1 cup Peas canned, drained
  • ½ cup Heavy Cream
  • ¼ cup Parmesan Cheese grated

Instructions
 

  • Cook the gnocchi according to your package instructions. Gnocchi will float to the top of the water when done. Drain and set aside.
  • In a saucepan over medium heat, add olive oil, butter, onions and salt. Cook until onions are nice and tender.
  • Stir in garlic and cook for an additional minute. Add tomatoes, oregano, parsley, black pepper and crushed red pepper. Cover and cook for an additional 8-10 minutes, stirring occasionally.
  • Stir peas into the tomato sauce. Slowly pour in heavy cream while continuing to stir until well incorporated. Bring to a low simmer for a couple minutes.
  • Toss gnocchi into the creamy tomato sauce and top with freshly grated parmesan cheese. Enjoy!
