Fit your mixer with the paddle attachment. Add softened cream cheese and cool whip to the bowl of your mixer. Whip until light and fluffy and well combined.
Layer half of the ice cream sandwiches in the bottom of your 9x13 dish. Spread slightly softened ice cream of choice on top in an even layer. Top with remaining ice cream sandwiches. Spread cheesecake cool whip topping on top and sprinkle top with sprinkles.
Transfer cake to your freezer an let freeze up for at least an hour. Slice and serve! Enjoy!
