Cut the zucchinis into strips about 3 inches long. Do this by cutting the zucchini in half so you have two round halves, then cut those in half long ways and then into threes.
Grab three bowls. Fill one with cornstarch, the second with 2 whisked eggs and the last with breadcrumbs, salt, pepper and garlic powder.
Toss zucchini in cornstarch until fully coated. Then, dredge zucchini in the egg and then transfer to coat in the breadcrumb mixture. Repeat until all zucchinis are breaded.
Fill a skillet with oil about 2 inches up the side. Heat oil to 350 degrees.
Carefully add zucchini to the skillet frying until golden. Carefully use tongs to rotate the zucchini to make sure all sides are frying evenly. Transfer zucchini to a rack as they finish. Serve immediately with marinara sauce or ranch dressing.
