Mashed Potatoes with Green Onions & Rosemary

  • 4 russet potatoes peeled, cut in fours
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp dried rosemary
  • 2 tbsp butter
  • 2 green onions chopped
  • 1/2 cup half&half



  • Place potatoes in a medium saucepan. Pour water over potatoes to cover. Bring water to a boil. Boil the potatoes for 10-12 minutes until potatoes are soft but not too soft to where they are falling apart in the water. Drain potatoes in a strainer.
  • Transfer potatoes back to saucepan, turn to low heat. Add remaining ingredients and mash potatoes using a potato masher until smooth. Remove from heat and serve.
