I love fresh green onions, and i found a trick once to keep them growing in my kitchen so i always have them on hand when cooking. Cut your green onion leaving about three inches on the bottom, place them standing straight up in a glass jar. Then place an inch of water in the glass. You will have green onions growing in no time! Oh, and be sure to change the water every couple days! Cool, huh? Anyways, back to the mashed potatoes! They are heavenly. Rosemary, garlic and of course green onion really make these mashed potatoes fabulous.
Mashed Potatoes with Green Onions & Rosemary

Ingredients:

4 russet potatoes (peeled, cut in fours)

1/4 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder

1/4 tsp dried rosemary

2 tbsp butter
-
2 green onions chopped
-
1/2 cup half&half
Directions:

Place potatoes in a medium saucepan. Pour water over potatoes to cover. Bring water to a boil. Boil the potatoes for 10-12 minutes until potatoes are soft but not too soft to where they are falling apart in the water. Drain potatoes in a strainer.

Transfer potatoes back to saucepan, turn to low heat. Add remaining ingredients and mash potatoes using a potato masher until smooth. Remove from heat and serve.
