Avocado Salsa Verde

Fresh and creamy avocado salsa verde is the perfect salsa to top your tacos, burritos, chips and more!

Avocado Salsa Verde 

Makes: 1 cup
Total time: 5 minutes
 
Ingredients:
 
  • 1 avocado, peeled and pitted
  • 2 tomatillos
  • 1 jalapeno
  • 1/4 small onion
  • 1 garlic clove
  • 1/4 tsp salt
  • 2 tbsp cilantro
  • 1 tbsp lime juice
  • 1/8 tsp cumin
  • 1/4 tsp granulated sugar
 
Directions:
Add all ingredients to a blender and blend until smooth. Serve immediately or place in the fridge for later use.

    Love this! I love all of the ingredients listed here on tacos, but honestly I hate having to prep, store, get out, and put on every individual one, when I’m making tacos and then enjoying leftovers. Plus it takes up so much fridge space to do so. This fits in one pint container, applies to tacos (or other dishes easily), and tastes delicious! PLUS it’s dairy free, which is a win for me when it comes to flavorful taco toppings! So far it’s lasted 4 days in the fridge without browning either. We have lots of leftovers so maybe just half a recipe next time. But for now the rest is going on breakfast tacos this weekend 😉
