Chewy and Delicious Oatmeal Chocolate Chunk Cookies - There is nothing better than a warm, fresh baked cookie! These oatmeal cookies are melt in your mouth delicious. They go great with a cold glass of milk or served with vanilla ice cream! You can also make the dough ahead and place the dough in the freezer for later use.
Oatmeal Chocolate Chunk Cookies
Makes: 3 dozen cookies
Ingredients:
- 1 â…› cups all-purpose flour
- ½ cup rolled oats
- â…“ cup brown sugar
- â…“ cup granulated sugar
- 1 egg
- ½ cup butter, softened
- ½ teaspoon salt
- ½ cup chocolate chunks
- ½ teaspoon baking soda
- ½ teaspoon vanilla extract
Directions:
- Preheat oven to 375 degrees.
- In a large bowl, combine flour, oats, salt and baking soda.
- In the bowl of your stand mixer, cream together butter, vegetable oil and sugars over medium speed until smooth. Beat in eggs and vanilla extract. Slowly add flour mixture until fully combined. Stir in chocolate chunks.
- Line a baking sheet with parchment paper and drop rounded tablespoons of cookie dough onto the baking sheet.
- Bake cookies for 9-11 minutes.
- Remove cookies from the oven and transfer to a cooling rack.
