    Pumpkin Blackberry Muffins

    These Pumpkin Blackberry Muffins are so delicious for Fall! The savory pumpkin flavor goes along perfectly with the sweetness of the blackberries. Get ready to indulge!

    Pumpkin Blackberry Muffins

    makes 48 mini muffins
     
    Ingredients:
    • 2 cups all-purpose flour
    • 1 ½ teaspoon baking soda
    • ¼ teaspoon salt
    • 1 cup granulated sugar
    • ½ cup canola/vegetable oil
    • 1 cup Greek yogurt
    • ⅓ cup pumpkin puree
    • 1 cup blackberries cut in half
    • 2 eggs
    • ½ teaspoon cinnamon
    • ¼ teaspoon ginger
    • ¼ teaspoon cloves
    Directions: Preheat oven to 350 degrees.
    1. Combine flour, baking soda, salt, cinnamon, ginger and cloves in a bowl and set aside.
    2. Cream together sugar, oil, Greek yogurt and pumpkin puree. Add eggs, one at a time.
    3. Fold the flour into your wet ingredients, about a ½ cup at a time, until fully incorporated.
    4. Drop muffin batter into a lightly greased mini-muffin pan. Drop a blackberry on top of each muffin.
    5. Bake your muffins at 350 degrees for about 10-12 minutes until a toothpick comes out clean.
