Ground Beef Empanadas

I love a warm and flaky empanada! Empanada’s are so much fun to eat because they come in so many different variations and you don’t need a fork! These empanadas are stuffed with a delicious, flavorful ground beef mixture and served with a creamy chipotle aioli dip that is absolutely melt in your mouth delicious!

Ground Beef Empanadas

 
Ingredients:
    • 1 empanada dough < click for recipe
    • Ground Beef Mixture:
    • 1/2 lb ground beef
    • 1/4 cup finely chopped onion
    • 1/4 cup finely chopped carrots
    • 1/4 cup finely chopped red bell pepper
    • 2 cloves minced garlic
    • 1 tbsp olive oil
    • 2 tbsp tomato paste
    • 2 tbsp water
    • 2 tsp worcestershire
    • 1 tsp chili powder
    • 1 1/2 tsp red wine vinegar
    • 1/4 tsp cumin
    • 1/4 tsp oregano
    • 1/4 paprika
    • salt and pepper
    • Creamy Chipotle Aioli Dip:
    • 1 tbsp chipotle in adobo sauce
    • 1/4 cup mayo
    • 1/4 cup sour cream
  • 1 tbsp lime juice
 
Directions:
1. For the ground beef mixture: Place olive oil, carrots, onion and red bell pepper in a saucepan over medium low heat and stir. Cover and let cook for about 5 minutes or until the veggies begin to soften. Turn the heat up to medium and add the ground beef and garlic. Cook about another 5 minutes until beef browns. Add remaining ingredients and reduce heat to low. Cover and cook for another 10 minutes to really let your flavors develop. Then, Remove from heat.
2. Chipotle Dip: place chipotle, mayo, sour cream and lime juice in a blender and blend just until combined. Then, place in the fridge until your empanadas are ready.
3. Preheat your oven to 400 degrees.
4. Now, it’s time to assemble your empanadas. Get out your empanada dough, cut into 8 equal pieces and roll out each piece into a circle. Scoop about 1 to 2 tbsp of the meat mixture onto one side of your empanada. Repeat for all 8 empanadas. Then fold over the other side of the empanada and seal edge shut with a fork.
5. Place empanadas on a baking sheet covered in parchment paper. Bake for about 15 minutes or until they begin to golden. Enjoy with your creamy chipotle aioli dip! YUMM.
