    Ground Beef Empanadas

    Ground Beef Empanadas - These empanadas are stuffed with a delicious, flavorful ground beef mixture and served with a creamy chipotle aioli dip that is absolutely melt in your mouth delicious!

    I love a warm and flaky empanada! Empanada's are so much fun to eat because they come in so many different variations and you don't need a fork!

    Ingredients for Ground Beef Empanadas: 

    1 empanada dough < click for recipe

    ½ lb ground beef

    ¼ cup finely chopped onion

    ¼ cup finely chopped carrots

    ¼ cup finely chopped red bell pepper

    2 cloves minced garlic

    1 tablespoon olive oil

    2 tablespoon tomato paste

    2 tablespoon water

    2 teaspoon worcestershire 

    1 teaspoon chili powder

    1 ½ teaspoon red wine vinegar

    ¼ teaspoon cumin 

    ¼ teaspoon oregano

    ¼ paprika

    salt and pepper 

    Creamy Chipotle Aioli Dip:

    1 tablespoon chipotle in adobo sauce

    ¼ cup mayo

    ¼ cup sour cream

    1 tablespoon lime juice

    How to make Ground Beef Empanadas:

    Mix all ingredients to make Chipotle dip and place in the fridge until your empanadas are ready.

    For the empanada filling: Place olive oil, carrots, onion and red bell pepper in a saucepan over medium heat and stir. Cover and let cook for few minutes until veggies are tender. Add the ground beef and garlic and cook until beef browns. Add remaining ingredients and reduce heat to low. Cover and cook for another 10 minutes to really let your flavors develop. Then, Remove from heat.

    Preheat your oven to 400 degrees.

    Get out your empanada dough, cut into 8 equal pieces and roll out each piece into a circle. Scoop about 1 to 2 tablespoon of the meat mixture onto one side of your empanada. Repeat for all 8 empanadas. Then fold over the other side of the empanada and seal edge shut with a fork.

    Place empanadas on parchment paper lined baking sheet. Bake for about 15 minutes or until they begin to golden. Enjoy with your creamy chipotle aioli dip!
