Mini Apple Cinnamon Sugar Muffins - Delicious bite-sized applesauce muffins baked to perfection and tossed in cinnamon sugar. Serve as a sweet breakfast treat or dessert. These little muffins are kid-friendly and perfect for the whole family.

My Apple Cinnamon Sugar Mini Muffins are one of my favorite breakfast treats! I love that they are small and I can just pop one or two in my mouth when I'm on the go or craving a sweet treat.
Not only are they fun to eat, but they are absolutely delicious! They almost taste like a cinnamon sugar donut hole. Serve with a nice hot cup of coffee for perfection.
You can also serve these muffins warm as a dessert with a scoop of vanilla ice cream. Trust me - it's absolutely delicious!

Ingredients You Need To Make Mini Apple Cinnamon Sugar Muffins:
All-Purpose Flour - You'll need two cups of regular all-purpose flour. We like to use organic unbleached flour.
Baking Powder - Baking powder helps to assist in the rising process of the muffins and will give your muffins a nice fluffy texture.
Salt - We use Himalayan or sea salt in our recipes but you can use your favorite cooking salt.
Ground Cinnamon - Ground cinnamon is needed to go into the muffin batter. We also use it to roll the muffins in after they have baked and cooled. Cinnamon gives the muffins a delicious warm spice flavor.
Butter - Salted or unsalted butter both will work in these muffins.
White Sugar - Regular white granulated sugar. We use pure cane sugar in most of our baking recipes.
Brown Sugar - Light or dark brown sugar can both be used in the muffin batter.
Eggs - You will need two regular eggs for this recipe.
Vanilla Extract - A good quality pure vanilla extract is best in this recipe.
Yogurt - We use plain greek yogurt in this recipe. Yogurt gives the muffins more moisture and the most delicious texture. Regular yogurt or sour cream can be used as a substitution.
Applesauce - Regular unsweetened applesauce is best.
Milk - We use whole milk in our muffins but you can use your milk of choice or half and half.

Tools You Need To Make Homemade Mini Muffins:
- Mini Muffin Pan - I used this exact silicone mini muffin pan. If using a silicone pan, you don't need to oil or line the pan. If using a metal pan, you'll need to lightly oil the pan to prevent sticking.
- Measuring Cups and Spoons - Use to properly measure all of your ingredients.
- Stand Mixer or Hand Held Mixer -
- Mixing Bowls - To mix your wet and dry ingredients.
- Silicone Spatula - To fold the dry ingredients into the wet.

How To Make Mini Apple Cinnamon Sugar Muffins:
Preheat oven to 375 degrees.
In a large bowl, mix together all-purpose flour, salt, baking powder and cinnamon.
Fit your mixer with the paddle attachment. In the bowl of your stand mixer, add softened butter, brown and white sugars. Beat until fluffy. Mix in eggs and vanilla extract. Mix in applesauce, yogurt, and milk.
Remove bowl from mixer and gently fold in flour mixture until well combined.
(This recipe makes about 48 mini muffins, you can bake in two batches or one using two pans.)
If using a metal mini muffin pan, lightly oil each cup. If using a silicone mini muffin pan, you can skip oiling. Fill each muffin cup until just about full. Repeat until all batter is used up.
Bake in preheated oven for 11-13 minutes. When done, a toothpick will run through the muffin and come out mostly clean. When done, allow muffins to lightly cool before transferring to a cooling rack.
While the muffins bake, mix cinnamon sugar in a small bowl.
Once your muffins have cooled, transfer muffins to a large plate or bowl. Gently baste or toss in melted butter. Then, sprinkle generously with cinnamon sugar. Enjoy!

How To Store Leftover Muffins:
You can store leftover muffins in a cake stand, sealed container or storage bag on the counter for up to 2-3 days.
These muffins can also be frozen in an airtight freezer bag for up to 90 days. I love to bake and freeze these muffins and thaw one or two out at a time when I have a craving.
