    Peppermint Cheesecake Brownies

    Peppermint Cheesecake Brownies - A layer of soft and chewy brownies, topped with creamy peppermint cheesecake and crushed peppermint candies. The peppermint cheesecake layer takes these brownie to another level! If you are looking for something new to bring to your holiday parties this year, these are just the thing!  

    Peppermint Cheesecake Brownies

     makes 16

    Ingredients: 

    For the cheesecake layer: 

    • 8oz. cream cheese, softened 
    • 1 egg
    • ¼ cup granulated sugar
    • 1 regular sized candy cane, crushed

    For the brownie layer: 

    • ½ cup flour
    • ½ cup granulated sugar
    • ¼ teaspoon baking soda
    • 3 tablespoon butter
    • 1 tablespoon water
    • ¼ teaspoon salt
    • 4 oz. semi sweet chocolate chips
    • ¼ teaspoon vanilla extract

    Topping:

    • 1 regular sized candy cane, crushed 

    Directions: 

    1. Preheat the oven to 350 degrees. 
    2. To make the cheesecake layer; Add all the ingredients except for the candy cane to your mixing bowl. Beat over medium speed until light and fluffy. Slowly, stir in crushed candy cane. Set aside. 
    3. For the brownie layer; In a small saucepan over medium heat, add butter, sugar and water. Stir frequently until a syrupy mixture forms and lightly starts to bubble. Be careful not to burn. Remove from heat and stir in the chocolate chips. Beat in the egg. 
    4. In a mixing bowl, add flour, baking soda and salt. Pour chocolate mixture in with the flour and mix to combine. 
    5. Line a 8"x8" baking dish with parchment paper. (Make sure to leave just a little bit of paper on the sides so you can easily pull the brownies out of the dish when they are finished.)
    6. Pour brownie mixture evenly along the bottom of the dish. Then pour the cheesecake layer directly on top. 
    7. Bake in the oven for about 50 minutes until a toothpick comes out clean. Cheesecake layer will be somewhat firm. Then, remove from oven. Sprinkle with crushed candy cane. Let cool completely. 
    8. Cut brownies into 16 pieces. Enjoy!
