Healthy Mexican Quinoa

Mexican Quinoa is the perfect healthier substitution for Mexican rice. It’s great topped off with grilled chicken, sautéed veggies, avocado, salsa and more!

Healthy Mexican Quinoa SI

serves 4-6 

Ingredients:

  • 1 cup quinoa
  • 1 small white onion, diced
  • 2 cups chicken broth, vegetable broth for vegan/vegetarian
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 tsp chili powder
  • 1/4 tsp garlic powder

Directions: 

  1. Add olive oil and diced onions to a large saucepan over medium heat. Cook the onions, stirring occasionally until soft. 
  2. Add quinoa to the onions and cook for a few more minutes, stirring occasionally to lightly toast quinoa. 
  3. Add the remaining ingredients to the pan and bring to a simmer. Stir to make sure the tomato paste is well incorporated and not chunky. 
  4. Turn to a low simmer, cover, and cook for about 20 minutes. Check on quinoa and give a light stir to make sure bottom is not burning. 
  5. Remove quinoa from heat and serve. Enjoy!
