Mexican Quinoa is the perfect healthier substitution for Mexican rice. It’s great topped off with grilled chicken, sautéed veggies, avocado, salsa and more!
Healthy Mexican Quinoa SI
serves 4-6
Ingredients:
- 1 cup quinoa
- 1 small white onion, diced
- 2 cups chicken broth, vegetable broth for vegan/vegetarian
- 2 tbsp tomato paste
- 1 tbsp olive oil
- 1/2 tsp salt
- 1 tsp chili powder
- 1/4 tsp garlic powder
Directions:
- Add olive oil and diced onions to a large saucepan over medium heat. Cook the onions, stirring occasionally until soft.
- Add quinoa to the onions and cook for a few more minutes, stirring occasionally to lightly toast quinoa.
- Add the remaining ingredients to the pan and bring to a simmer. Stir to make sure the tomato paste is well incorporated and not chunky.
- Turn to a low simmer, cover, and cook for about 20 minutes. Check on quinoa and give a light stir to make sure bottom is not burning.
- Remove quinoa from heat and serve. Enjoy!
