If you're looking for an easy one pot dinner pasta recipe, this is it! Not only is my One Pot Cheesy Beef Taco Pasta delicious, it's a major crowd pleaser.
You can use either ground beef or ground turkey in this recipe. This pasta will serve about 4-5 people. If you are cooking for a large crowd or you want leftovers, you can simply double the recipe.

Ingredients You Need To Make One Pot Cheesy Beef Taco Pasta:
Pasta - We use a half pound of pasta shells in this recipe. But, you can use any short-cut pasta.
Ground Beef - You can use ground beef or ground turkey in this pasta. You'll need about one pound.
Red Bell Pepper - Half a large red bell pepper or equivalent to one cup chopped peppers. Yellow or orange bell peppers can be used as a substitution.
Green Bell Pepper - Half a large green bell pepper or equivalent to one cup chopped. Hatch, Anaheim or poblano peppers can be used as a substitution.
Onions - One small yellow or white onion or equivalent to about one cup chopped.
Garlic - Two large garlic cloves are needed for this recipe. If you don't have fresh garlic, you can substitute with one teaspoon dried.
Tomato Sauce - One small eight ounce can of tomato sauce. We use this to make the sauce tomato creamy.
Chicken Broth - Use your favorite low-sodium or regular chicken broth. If using regular chicken broth, your pasta will turn out slightly saltier but won't make much of a difference.
Cream Cheese - Cream cheese adds a delicious creamy flavor to the pasta sauce.
Sour Cream - You can use sour cream or plain greek yogurt.
Seasoning Blend - Chili powder, Salt, Black Pepper, Cumin
Cheddar Cheese - We use sharp cheddar cheese in this recipe but you can also use mild.

How To Make One Pot Cheesy Beef Taco Pasta:
Melt butter and oil in a large skillet over medium heat. Add chopped peppers and onions and cook until tender.
Add ground beef or turkey and minced garlic. Cook until browned. If using ground beef, you may need to spoon off excess grease.
Stir in cream cheese, sour cream and seasonings until combined. Add remaining ingredients except for the cheddar cheese and stir to combine.
Cover and cook over a low simmer for about 20 minutes until noodles are tender. Stir in cheddar cheese and sprinkle with fresh chopped cilantro(optional). Enjoy!
