Creamy and delicious spinach dip on top of freshly sliced french bread toasted to golden perfection. I had some leftover french bread that I needed to use up so I decided to try my own twist on a spinach dip on toast appetizer. It was a hit!  You could also just make the spinach dip as shown below and simply dip your toasted french bread into the dip but I think toasting it all together really transforms this dish into something amazing!

    Spinach Dip Toast

    Ingredients:

    • 3 cups spinach, stems removed
    • 1 clove garlic, minced
    • 2 tablespoon butter
    • ½ onion, chopped
    • 1 tablespoon olive oil
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    • pinch paprika
    • pinch red pepper flakes
    • ⅓ cup heavy cream
    • ¼ cup swiss cheese, grated
    • ½ lg. french loaf, cut into 1-½" thick slices

    Directions:
    1. In a skillet over medium heat add butter, olive oil and onions. Cook for 10-12 minutes until onions are soft.
    2. Add garlic, salt, pepper, paprika, red pepper flakes and cook for 1 more minute.
    3. Slowly stir in heavy cream and continue to stir for about 1 minute. Add spinach to the sauce and stir to coat. Let cook for another 4-5 minutes until spinach is completely cooked down. Remove from heat and stir in swiss cheese. Let sit for about 3-4 minutes to let the cheese melt.
    4. Place 2 tablespoon of spinach dip on top of the sliced bread repeat with all slices, there should be about 6. Place toast in the toaster oven and toast for about 8-10 minutes until bread is nice and toasted and tops are lightly golden. Enjoy!
