Creamy and delicious spinach dip on top of freshly sliced french bread toasted to golden perfection. I had some leftover french bread that I needed to use up so I decided to try my own twist on a spinach dip on toast appetizer. It was a hit! You could also just make the spinach dip as shown below and simply dip your toasted french bread into the dip but I think toasting it all together really transforms this dish into something amazing!
Spinach Dip Toast
Ingredients:
- 3 cups spinach, stems removed
- 1 clove garlic, minced
- 2 tablespoon butter
- ½ onion, chopped
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- pinch paprika
- pinch red pepper flakes
- ⅓ cup heavy cream
- ¼ cup swiss cheese, grated
- ½ lg. french loaf, cut into 1-½" thick slices
Directions:
- In a skillet over medium heat add butter, olive oil and onions. Cook for 10-12 minutes until onions are soft.
- Add garlic, salt, pepper, paprika, red pepper flakes and cook for 1 more minute.
- Slowly stir in heavy cream and continue to stir for about 1 minute. Add spinach to the sauce and stir to coat. Let cook for another 4-5 minutes until spinach is completely cooked down. Remove from heat and stir in swiss cheese. Let sit for about 3-4 minutes to let the cheese melt.
- Place 2 tablespoon of spinach dip on top of the sliced bread repeat with all slices, there should be about 6. Place toast in the toaster oven and toast for about 8-10 minutes until bread is nice and toasted and tops are lightly golden. Enjoy!

- ½ lg. french loaf cut into 1-½" thick slices

- Add garlic, salt, pepper, paprika, red pepper flakes and cook for 1 more minute.
- Slowly stir in heavy cream and continue to stir for about 1 minute. Add spinach to the sauce and stir to coat. Let cook for another 4-5 minutes until spinach is completely cooked down. Remove from heat and stir in swiss cheese. Let sit for about 3-4 minutes to let the cheese melt.
- Preheat oven to 400 degrees.
- Place 2 tablespoon of spinach dip on top of the sliced bread and set on a parchment paper lined baking sheet. Repeat with all slices, should be about 6.
- Place in the preheated and bake for 10-15 minutes until bread is nice and toasted and tops are lightly golden. Enjoy!
