Apple Cinnamon Muffin Cookies – Absolutely delicious soft and super fluffy apple cinnamon cookies! These cookies will melt in your mouth!

Ingredients you need for this recipe:

  • all-purpose flour
  • salt
  • granulated sugar
  • brown sugar
  • butter
  • baking soda
  • vanilla extract
  • egg
  • apple
  • cinnamon
  • cornstarch

Here are the tools you need to make these scrumptious cookies:

  • stand mixer or hand mixer
  • baking sheet
  • cooling rack
  • measuring cups and spoons
  • parchment paper
  • knife
  • cutting board

How to make Apple Cinnamon Muffin Cookies from scratch:

Preheat oven to 350 degrees.

In a bowl, combine flour, salt and baking soda.

In another bowl, add chopped apple and cornstarch. Mix to fully coat apples.

Fit your mixer with the paddle attachment. Over medium speed, beat butter and sugars until smooth. Beat in egg and vanilla extract. Slowly beat in flour mixture until fully combined. Then, fold apples into the dough.

In a small bowl, mix cinnamon and sugar. Roll dough into tablespoon sized balls of dough and then roll into the cinnamon sugar mixture. Transfer to a parchment paper lined baking sheet.

Bake cookies for 10-12 minutes. A toothpick should run through the cookie and come out clean. Transfer cookies to a cooling rack.

  • 1 1/4 cups all-purpose flour

  • 2 tsp cornstarch

  • 2 tbsp granulated sugar for rolling

Instructions

    Correction salt is mentioned , but no amount stated, also it says we will need a knife & doesn’t mention when needed. Dough is very sticky, but overall tasty recipe, would make again.
