How to make Apple Cinnamon Muffin Cookies from scratch:

    Preheat oven to 350 degrees.

In a bowl, combine flour, salt and baking soda.

In another bowl, add chopped apple and cornstarch. Mix to fully coat apples.

Fit your mixer with the paddle attachment. Over medium speed, beat butter and sugars until smooth. Beat in egg and vanilla extract. Slowly beat in flour mixture until fully combined. Then, fold apples into the dough.

In a small bowl, mix cinnamon and sugar. Roll dough into tablespoon sized balls of dough and then roll into the cinnamon sugar mixture. Transfer to a parchment paper lined baking sheet.

Bake cookies for 10-12 minutes. A toothpick should run through the cookie and come out clean. Transfer cookies to a cooling rack.

These muffin cookies were delicious! the apple adds the perfect amount of moisture to the cookie, and just the taste is divine. The texture is one of my favorite parts, i like a softer cookie. Amazing recipes!

I would skip rolling them in cinnamon and sugar and instead frost them with cream cheese frosting and then sprinkle with cinnamon

I made these Apple Cinnamon Muffin Cookies tonight. I substituted the 1/3cup sugar with 1/3cup Monk Fruits. I wanted to cut down on some of the sugar. I also mixed the Cinnamon with Monk Fruit to roll the cookies in. They turned out great.

Correction salt is mentioned , but no amount stated, also it says we will need a knife & doesn't mention when needed. Dough is very sticky, but overall tasty recipe, would make again.
