Baked Chicken Taquitos – Crispy homemade chicken taquitos are the perfect main course or appetizer. Shredded chicken wrapped tightly in corn tortillas then baked (or fried) to golden perfection. Serve with guacamole, salsa or sour cream!
Tools to have on hand to make easy baked chicken taquitos at home from scratch:
- Small Frying Pan – If you are using the frying method.
- Measuring Cups + Spoons – To measure your ingredients.
- Tongs – To turn your taquitos if frying.
- Baking Sheet – If using the baking method.
- Parchment Paper – If you are using the baking method, to prevent taquitos from sticking.
- Toothpicks – To hold the taquitos together while cooking.
Homemade chicken taquitos are fairly easy to make and are extremely delicious! They go great served as an appetizer or main course. Kids absolutely love them too!
You can easily make these taquitos ahead of time and freeze for later use as well. This is really convenient if you are looking to have taquitos stocked up in the freezer. That way you can pull a few out at a time and bake or fry them as needed.
We served our taquitos with homemade guacamole, sour cream and fresh homemade pico de gallo. It was excellent! I will go ahead and link some of my favorite dipping recipes for you below.
If you are cooking for a crowd, simply double the recipe.
Ingredients you need to make homemade baked chicken taquitos:
- Shredded Chicken – Try my Easy Crockpot Shredded Chicken or my Easy Mexican Shredded Chicken. You can also use rotisserie chicken.
- Jalapeno – If you are cooking for kids and don’t want spice you can skip this or use green bell pepper instead.
- Onion – Yellow or white onion works best in this recipe. If you don’t have fresh, you can use 1/2 tsp onion powder.
- Tortillas – Yellow or white corn taco sized tortillas.
- Salt + Pepper
How to make Baked Chicken Taquitos (or fried):
First, you’ll need to steam the tortillas. Place tortillas on a plate and cover with a clean kitchen towel. Microwave for 45 seconds. Remove tortillas from the microwave leaving towel on top and let sit for another few minutes.
In a small bowl, mix the shredded chicken, salt, pepper, finely chopped onion and jalapeno.
Place about 2 tablespoons of chicken filling on the end of the tortilla. As tight as you can, without ripping the tortilla, roll all the way up. Use a toothpick to seal the taquito.
Baking Instructions: Preheat oven to 400 degrees. Arrange taquitos on a parchment paper lined or lightly oiled baking sheet. Lightly baste outside of taquitos with oil. Bake taquitos for 15 minutes or until nice and golden.
Frying Instructions: Heat oil in a small frying about a third of way up the side to medium heat or 350 degrees.
Place about 3-4 taquitos in the hot oil for about 1-2 minutes then using tongs, gently flip taquito over. When nice and golden, transfer taquitos to a cooling rack. Repeat with remaining taquitos.
Serve taquitos with your favorite dipping sauces like sour cream, salsa, or guacamole.
How to freeze homemade chicken taquitos:
Cook taquitos using the frying or baking method. Let cool completely and place in a freezer bag in the freezer for up to 60 days.
To reheat, following baking or frying instructions.
