Notes on Ingredients for Creamy Tomato Chicken Pasta:
*Full measurements and instructions are listed below in recipe card.
Gemelli/Rotini Pasta - Any short cut pasta will do! We use gemelli in this recipe.
Chicken Thighs - Boneless, skinless chicken thighs or chicken breasts.
Seasoning Blend - Dried Parsley + Salt + Garlic Powder + Paprika + Dried Basil + Black Pepper.
Honey - We use honey as part of the marinade for the chicken. It adds a nice light sweetness to the dish.
Olive oil - We use olive oil in this recipe, but you can also use avocado oil or similar.
Butter - Salted or unsalted butter both work great.
Onions - We use yellow onions in this recipe but white, yellow or red onions will all work great!
Garlic - I always recommend using freshly minced or finely chopped garlic cloves. You may substitute for a half teaspoon garlic powder.
Red Bell Pepper - One regular red bell pepper is used for a delicious slightly sweet flavor. You can use an orange or yellow pepper in substitution.
Tomato Paste - This goes into the rich and creamy sauce. If you don't have tomato paste, use one fifteen ounce can of tomato sauce.
Heavy Cream - We use heavy cream in the pasta sauce for a rich and creamy sauce. Half and half can be used as a substitution but the sauce may not turn out as creamy.
Parmesan Cheese - Freshly grated parmesan cheese right off the block is going to give you the best flavor.

How to make Creamy Tomato Chicken Pasta:
Cook pasta according to package instructions. When done, drain and set aside.
Evenly season chicken with the seasoning blend and honey.
In a large skillet over medium heat, add oil and one tablespoon butter. Once the skillet is hot, add chicken. Cook for about 4-5 minutes on each side until cooked through to at least 165 degrees. Transfer to a cutting board and cut into chunks.
In the same skillet you cooked the chicken, add remaining one tablespoon of butter, onions, and red bell peppers. Cook until veggies are tender. Add garlic and cook another minute.
Stir in tomato paste. Slowly begin to stir in heavy cream until well combined. Stir in parmesan cheese. Add cooked pasta and chicken back to the skillet and stir to combine.

FREQUENTLY ASKED QUESTIONS:
Store leftover pasta completely cooled in an airtight container in the fridge for up to 2 days.
Yes. Once cooled, freeze leftover pasta in a freezer safe container. I recommend portioning it out so you can reheat one serving at a time. To reheat, place in a microwave safe bowl and sprinkle with a little bit of water. Cover bowl with a damp paper towel and heat in 30 second increments until hot.
To make this pasta spicier, add 1-3 teaspoons of crushed red pepper flakes. You can also drizzle a little bit of tabasco on top when serving.
Yes. If you don't have tomato paste, use one 15 ounce can of tomato sauce.
Yes. However, the pasta sauce may not be as rich if you use half and half and the sauce will be slightly thinner.
