Spicy Chipotle Chicken Pasta - Mouthwatering delicious pasta recipe made with chicken, peppers, onions and peas tossed a creamy, slightly sweet and spicy chipotle sauce. Finish with fresh chopped cilantro, tortilla strips and parmesan cheese.

This recipe will serve about four people. If you are cooking for a larger crowd, simply double the recipe.

Notes on Ingredients for Spicy Chipotle Chicken Pasta:

Penne Pasta - Half pound of your favorite short cut pasta.
Chicken Thighs - Boneless, skinless chicken thighs or breasts.
Honey - We use unflavored raw organic honey. This adds a delicious necessary sweetness to the dish.
Lemon Juice - You'll need two tablespoons of fresh squeezed lemon juice - about a half of a lemon.
Seasonings - Garlic Powder + Salt + Black Pepper + Parsley + Paprika.
Red Bell Pepper - One large red bell pepper. You can use a yellow or orange bell pepper as a substitution.
Onion - One medium yellow onion. You can also use red or white onion.
Garlic Cloves - Three fresh garlic cloves are needed. You can substitute with one teaspoon garlic powder but I highly recommend using fresh.
Peas - We use canned peas but you can also use frozen.
Oil - Olive or avocado oil both work great in this recipe. Use your favorite cooking oil.
Butter - Salted or unsalted butter both work great.
All-Purpose Flour - Use to thicken the chipotle cream sauce.
Chicken Broth - We use chicken bone broth, you can use regular chicken broth or vegetable broth.
Milk - We use whole milk in this recipe, but you can also use half and half or your milk of choice.
Parmesan Cheese - Freshly grated parmesan is highly recommended in this recipe. Use in the sauce and as a garnish.
Chipotle Peppers in Adobo Sauce - You can buy a can of chipotle in adobo sauce at your local grocery store in the salsa aisle.
Cilantro - Fresh chopped cilantro as a garnish. It adds a delicious fresh flavor that's a must in this recipe.
Tortilla Strips - We cut up one two corn tortillas into strips and placed in the toaster oven on toast setting until golden. Watch closely so they don't burn.

How to make Spicy Chipotle Chicken Pasta:
Season chicken thighs in honey, lemon juice, paprika, parsley, salt, pepper and garlic powder. Let marinate for at least 10-30 minutes.
Cook penne pasta according to package instructions. When done drain and set aside.
In a large skillet, add one tablespoon butter and one tablespoon oil over medium heat. Add chicken thighs and cook for about 4-5 minutes on each side until golden and cooked through to at least 165 degrees. Remove chicken and cut into chunks.
In the same skillet you cooked the chicken, add remaining two tablespoons of butter, red bell pepper and onion. Cook until tender. Add garlic and two to three tablespoons of chipotle sauce(depending on how spicy you want it) and cook another minute.
Sprinkle flour over veggies and stir to combine. Slowly pour in chicken broth while stirring frequently followed by the milk. Sprinkle in parmesan cheese.
Add chicken, peas and cooked penne to the skillet and stir to fully combine. Let sit for a couple minutes on low heat before serving.
Sprinkle top with fresh chopped cilantro and more parmesan cheese. Serve with tortilla strips(optional). Enjoy!
