Honey Roasted Whole Carrots

Honey Roasted Whole Carrots – Whole carrots seasoned with honey, olive oil, garlic, salt, pepper and fresh dill roasted to perfection in the oven.

Ingredients you need for this recipe:

  • Whole Carrots ( 1-2 pounds whole carrots, regular or rainbow)
  • Fresh Dill (you can use fresh or dried)
  • Honey
  • Salt
  • Pepper
  • Olive Oil (or you can use avocado or canola oil)
  • Garlic Powder
  • Butter

Tools to have handy when making whole roasted carrots:

  • Baking Sheet
  • Small Bowl
  • Basting Brush
  • Measuring Spoons
  • Small Whisk or Fork

How to roast whole carrots in the oven:

Preheat oven to 400 degrees.

In a small bowl, whisk together honey, dill, salt, pepper, garlic powder and olive oil.

Lay carrots on baking sheet and baste carrots all over with honey mixture. Be sure to roll carrots around to fully coat carrots.

Place carrots in the oven and roast for 25-30 minutes until slightly tender and golden.

In a small bowl, melt butter with honey to make the honey butter.

Remove carrots from oven and baste with honey butter. Enjoy.

  • 1/4 tsp garlic powder

Honey Butter

  • 2 tbsp butter
  • 1 tsp honey

Instructions
 

  • Preheat oven to 400 degrees.
  • In a small bowl, whisk together honey, dill, salt, pepper, garlic powder and olive oil.
  • Lay carrots on baking sheet and baste carrots all over with honey mixture. Be sure to roll carrots around to fully coat carrots.

    I made these with the London Broil recipe and mashed potatoes. It was a hit and no leftovers. This meal with most certainly go into our rotation. Thank you so much.
