    One Pot Chicken Parmesan Pasta

    One Pot Chicken Parmesan Pasta - Easy flavor-packed one pot chicken parmesan pasta made simply with fresh herbs and melty mozzarella cheese. The best part about this comfort meal is that it is budget friendly, kid friendly and is so easy to make.

    We like to serve our pasta with homemade garlic bread or a fresh salad. I will link a few of my favorite bread recipes for you below that pair perfectly with this pasta.

    This recipe serves about four people, giving each person a generous portion. If you are cooking for a large crowd, you can easily double this recipe. If you are cooking for a smaller crowd, not to worry, this pasta makes amazing leftovers!

    Ingredients you need to make Chicken Parmesan Pasta:

    Chicken Breasts - About two boneless, skinless chicken breasts or equivalent to one pound.

    Rigatoni - I used rigatoni but you can also use penne, ziti, farfalle and more.

    Tomato Sauce - One 15 oz. can tomato sauce or two cups jarred sauce.

    Diced Tomatoes - You'll need one 15 oz. can diced tomatoes or equivalent to two cups freshly chopped.

    Garlic Cloves - Fresh garlic is best in this recipe!

    Onion - One yellow, white, sweet or red onion all work great in this recipe.

    Basil - I always prefer fresh herbs but if you only have dried that's ok too.

    Oregano - I always prefer fresh herbs but if you only have dried that's ok too.

    Parsley - I always prefer fresh herbs but if you only have dried that's ok too.

    Brown Sugar - Light or dark brown sugar both work great in this recipe.

    Parmesan Cheese - Fresh grated parmesan off the block is best but you can also use pre-grated.

    Mozzarella Cheese - I prefer to grate the mozzarella directly off the block because it melts so nicely. But, if you only have pre-shredded that's fine too.

    Water - You'll need two cups of water to provide enough moisture to cook the pasta.

    Salt, Pepper, Garlic Powder - To season the chicken.

    Oil - Olive, canola or avocado oil.

    Butter - Salted or unsalted butter both work great.

    Tools to have on hand:

    • Enameled Cast Iron Skillet or Large Pot – To cook your pasta in!
    • Cooking Spoon – For stirring and cooking your pasta.
    • Measuring Cups and Spoons – To properly measure all of your ingredients.
    • Cutting Board + Chef Knife – For chopping veggies and chicken.
    • Garlic Mincer – To mince your garlic or you can use a fine grater.
    • Cheese Grater – If you are shredding cheese off the block.

    How to make the best One Pot Chicken Parmesan Pasta:

    Season chicken with salt, pepper and garlic powder.

    Add oil to a large deep skillet over medium heat. Once the skillet is hot, add chicken and cook until bottom is golden, flip chicken over and cook until golden and cooked through (165 degrees). When done, transfer chicken to a plate.

    Next, add onions and butter to the skillet. Cook for a few minutes until onions are tender. Add minced garlic and cook another minute until fragrant.

    Add remaining ingredients (except for the cheeses) to the skillet along with the cooked chicken and stir to combine. Bring to a low simmer. Cover and cook for about 15-20 minutes or until rigatoni is cooked, stirring halfway through.

    When done, remove pasta from heat and stir in parmesan cheese. Sprinkle mozzarella cheese on top and cover to melt.

    Serve pasta with fresh grated parmesan, red pepper flakes and fresh chopped parsley (optional). Enjoy!
