
Tomato, Mozzarella & Basil Bruschetta - Crispy baguette sliced and topped with mozzarella cheese and a light drizzle of olive oil. These are gently toasted until lightly golden and mozzarella is melted. Then, topped with a fresh tomato, basil, chopped onion, minced garlic tossed in balsamic vinegar. This bruschetta serves as an excellent appetizer!
This recipe makes about 20-24 bruschetta.
Ingredients you need for this recipe:
- 1 baguette
- 10 fresh basil leaves, torn into small pieces
- 3-4 large tomatoes (chopped, seeds removed)
- 2 tablespoon onion, finely chopped
- 1 garlic clove, minced
- 2 tablespoon balsamic vinegar
- ¼ cup mozzarella, sliced thin
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ¼ teaspoon fresh cracked black pepper

How to make homemade Tomato Basil Mozzarella Bruschetta:
Slice baguette into thin slices about ¼" thick.
Drizzle your baguette slices with olive oil, then top each slice with a thin small slice of mozzarella cheese.
Lightly toast your mozzarella topped baguettes in a toaster oven or in the oven at 350 degrees for about 5-7 minutes.
While your baguette slices are toasting; combine tomatoes, onions, garlic, basil, balsamic, black pepper and salt in a small bowl. Taste and add salt if needed, a pinch at a time.
When your baguette slices are done toasting, gently remove and let them cool slightly. Top each slice with about 1 tablespoon of the tomato mixture. You are ready to eat!
Recipe notes: I used Roma tomatoes and yellow onion. You can use whatever tomatoes you would like. Red onion would also go excellent in this recipe as a substitute to yellow.
