I love this recipe because not only does it cook up in just 30 minutes, it's always a hit in my house. If you are looking for an easy budget friendly recipe to add to your weekly meal planning, this is the recipe for you.

This Ground Beef Stroganoff serves about 4 people. If you are cooking for a larger crowd, you can easily double the recipe. Store leftovers completely cooled in an airtight container in the fridge for up to 2-3 days.

Ingredients you need to make Ground Beef Stroganoff:

Ground Beef - I used 85/15 fat ratio ground beef in this recipe. You'll need about a half pound.

Mushrooms - Mini portobello mushrooms are best in this recipe. You'll need an 8 oz package or equivalent to about 2 cups sliced. You can also use white mushrooms.

Egg Noodles - You'll need a half pound of egg noodles.

Onion - One small yellow, white, or red onion.

Garlic - Fresh garlic is best in this recipe. If you don't have fresh garlic, you can use garlic powder instead. Use 1 teaspoon garlic powder to substitute for fresh garlic.

Beef Broth - One 14.5 oz. can of beef broth or equivalent to 1 ¾ cups.

Cream Cheese - Full fat cream cheese works best in this recipe, but you can use what you have on hand.

Sour Cream - Full fat sour cream works best in this recipe, but you can use what you have on hand.

Mustard - I prefer yellow mustard, but you can also use grainy mustard or dijon mustard.

All-Purpose Flour - This will help to thicken the sauce.

Butter - I used unsalted butter in this recipe, but you can use salted as well.

Salt + Pepper - To season the ground beef.

Parsley - Fresh chopped parsley is best and is an optional topping.

**Full measurements and instructions listed below.

How to make Ground Beef Stroganoff:

Boil egg noodles according to package instructions, drain and set aside for later use.

In a large skillet, add ground beef and season with a pinch of salt and pepper. Brown meat over medium-high heat then transfer to a plate for later. Drain any excess grease from skillet.

Add butter and onions to the skillet over medium heat and cook for about 2-3 minutes. Add mushrooms and cook until golden and onions are tender. Next, stir in minced garlic and cook for another minute.

Sprinkle flour over mushrooms and onions and mix to combine. Slowly add beef broth while stirring. Then, add ground beef back to the skillet along with sour cream, cream cheese and mustard. Stir occasionally over medium heat until you have a creamy sauce.

Toss egg noodles into the sauce and stir to combine. Let cook another minute, then remove from heat. Sprinkle top with fresh chopped parsley (optional). Enjoy!

Would the world end if someone served beef stroganoff with rice instead of of noodles?
