Slow Cooker Lasagna - Easy and delicious lasagna made in a crockpot/slow cooker. This lasagna is this ultimate simple meal planning recipe!

My Slow Cooker Lasagna recipe is full of delicious flavors starting with the meat sauce made with Italian sausage, onions, carrots, garlic and robust tomato sauce. Layered with cottage cheese, mozzarella and parmesan cheese, this lasagna is golden cheesy perfection.
We served our lasagna with my favorite Easy Homemade Garlic Bread. It was absolute perfection! This recipe serves about 6 people. If you aren't cooking for a large crowd, not to worry. This lasagna makes for amazing leftovers!
Store completely cooled leftover lasagna in an airtight container in the fridge for up to 2-3 days. You can also freeze lasagna in an airtight freezer bag for up to a month.
Ingredients you need to make Lasagna in your crockpot/slow cooker:
Lasagna - You'll need about 12 sheets of lasagna for this recipe. You can use oven ready or regular.
Ground Italian Sausage - You can also use ground beef or ground turkey.
Tomato Sauce - Four cups of tomato sauce or two 15 oz. cans.
Carrot - One large carrot.
Onion - Yellow, red or white onion all work great in this recipe.
Garlic - Fresh garlic is best in this recipe. You'll need 4 large cloves.
Mozzarella Cheese - I prefer to use a good quality mozzarella cheese and grate it off the block.
Parmesan Cheese - I prefer to use a good quality parmesan cheese and grate it off the block.
Cottage Cheese - You'll need 1 ½ cups of cottage cheese. You can also use
Brown Sugar - Light or dark brown sugar both work great in this recipe.
Balsamic Vinegar - If you don't have balsamic vinegar, you can also use red wine vinegar.
Salt & Pepper - To season your pasta sauce.
Parsley - Fresh or dried. If using fresh, double the amount in this recipe.
Basil - Fresh or dried. If using fresh, double the amount in this recipe.

How to make Slow Cooker Lasagna:
Start by making the meat sauce: In a large skillet over medium heat, add sausage, carrots and onions. Cook, stirring occasionally, until sausage is browned and veggies are tender. Stir in garlic, brown sugar, balsamic vinegar, salt, pepper, parsley, basil and tomato sauce. Bring sauce to a low simmer for 5 minutes. Then, remove from heat.
In a small bowl, mix mozzarella and parmesan cheese.Â
Arrange Lasagna in Slow Cooker: Start by scooping 1 cup of sauce and spread evenly in the bottom of your slow cooker. Top sauce with lasagna sheets, you'll need to break them up to fit covering the bottom. Spread half of the cottage cheese evenly on top the lasagna. Sprinkle ⅓ of the cheese on top of the cottage cheese. Top with 1 ¼ cup sauce. Repeat this layer for the second layer. Top second layer with lasagna, followed up remaining sauce then remaining cheese.
Cook lasagna on low heat for 4 hours. When done, let lasagna cool slightly, slice and serve. Enjoy!
