Chocolate Peanut Butter Energy Balls

Chocolate Peanut Butter Energy Balls – Super easy and healthy energy bites make for a delicious midday snack or breakfast. These bites are packed with healthy energy boosting ingredients that don’t weigh you down.

I like to make my energy bites at the beginning of the week and store them in the fridge for a quick and easy breakfast on the go or midday snack. Made with rolled oats, flaxseed meal, chia seeds, peanut butter, chocolate, honey and a pinch of cinnamon. These are very filling and delicious!

This recipe makes a dozen energy balls, so if you have a bigger family or are preparing for a larger crowd, simply double the recipe. You can also cut this recipe in half if you don’t want that many.

Ingredients you need to make Healthy Energy Bites:

Rolled Oats – I recommend using old fashioned rolled oats in this recipe. Not steel cut.

Peanut Butter – You can use your favorite peanut butter. Natural, chunky or smooth. Almond butter and cashew butters would also work great.

Flaxseed Meal – High in fiber and omega-3’s!

Honey – You can use your favorite honey in this recipe! I prefer to use local honey which is especially good if you have allergies like me.

Chia Seeds – These are so good for you and loaded with heart healthy omega-3’s and fiber.

Cinnamon – You’ll need about a pinch of ground cinnamon in this recipe. If you don’t have it, you can skip this ingredients.

Cocoa Powder – A good quality organic cocoa powder is best, but you can use what you have on hand.

Vanilla Extract – Adds a nice flavor to the energy bites.

Tools to have on hand:

Bowl – To mix your ingredients together in.

Fork – To mix all of the ingredients together.

Measuring Cups + Spoons – For properly measuring all of the ingredients.

How to make Chocolate Peanut Butter Energy Balls:

In a bowl mix dry oats, flaxseed meal, chia seeds, cinnamon and cocoa powder.

In another bowl, whisk together peanut butter, honey and vanilla extract.

Pour peanut butter mixture into the dry ingredients and mix to fully combine.

Place in the fridge for about 30 minutes. Roll mixture into 1 1/2 tbsp balls – I used a cookie scoop!

Store energy bites in a sealed container in the fridge for up to a week.

Ingredients
  

  • 1 cup Rolled Oats
  • 1/2 cup Peanut Butter
  • 1/2 cup Flaxseed Meal
  • 1/3 cup Honey
  • 1 1/2 tbsp Chia Seeds
  • 1/4 tsp Ground Cinnamon
  • 1 tbsp Cocoa Powder
  • 1 tsp Vanilla

Instructions
