Banana Nut Muffins

Banana Nut Muffins – Super moist and delicious banana nut muffins make for a delicious quick and easy breakfast. This recipe is such a great way to use up overly ripe bananas.

This recipe makes 6 standard muffins. If you are serving a crowd, simply double the recipe.

What ingredients do I need to make this recipe?

  • very ripe bananas
  • vanilla extract
  • egg
  • brown sugar
  • granulated sugar
  • vegetable oil
  • walnuts or pecans
  • all-purpose flour
  • wheat flour
  • baking powder
  • cinnamon
  • salt
  • milk

Here are the tools needed for this recipe:

  • muffin pan
  • muffin liners
  • mixing bowl
  • fork
  • measuring spoons and cups
  • silicone spatula
  • spoon
  • chef knife
  • cutting board

How do I make banana nut muffins?

Preheat oven to 375 degrees.

In a large bowl, combine flours, baking powder, salt and cinnamon. Set aside.

In another large bowl, combine mashed bananas, vegetable oil, sugars and vanilla. Stir in the egg, milk and nuts. Gently mix flour into the wet ingredients. Be careful not to over mix or you will have dense muffins.

Line a standard muffin pan with muffin liners. Fill each muffin liner about two thirds of the way full. Bake muffins for 14-16 muffins until a toothpick runs through and comes out clean.

Ingredients
  

  • 2 very ripe bananas mashed
  • 1 tsp vanilla extract

  • 2 tbsp granulated sugar
  • 1/4 cup vegetable oil
  • 1/2 cup walnuts chopped
  • 1 1/4 cups all-purpose flour
  • 1/2 cup wheat flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 tbsp milk

Instructions
 

  • Preheat oven to 375 degrees.
